# What you'll need:

01 - 4 cups filtered water
02 - 1/4 cup organic cane sugar
03 - 2 tablespoons water kefir grains or 2 tablespoons ginger bug
04 - 1/4 cup fresh lemon juice

05 - 1/2 cup fresh orange juice
06 - 1/2 cup fresh lime juice
07 - 8 fresh mint leaves
08 - 4 thin orange slices
09 - Ice cubes, as needed

# Method:

01 - In a sanitized glass jar, dissolve organic cane sugar into filtered water. Gently stir in water kefir grains or ginger bug and add fresh lemon juice, using a non-metallic spoon.
02 - Cover the jar with a breathable cloth or coffee filter, secured with a rubber band. Allow mixture to ferment at room temperature (68–77°F) for 24 to 48 hours, until the liquid becomes lightly sparkling and tangy.
03 - Remove and strain out kefir grains or ginger bug. Reserve cultures for future batches or discard as desired.
04 - In a pitcher, combine the fermented soda base with fresh orange juice, fresh lime juice, and mint leaves. Stir gently to incorporate flavors.
05 - Fill individual glasses with ice cubes. Pour the finished soda mocktail over ice, garnish each serving with a thin slice of orange and additional mint leaves if preferred.
06 - Serve promptly to retain effervescence and freshness.
