# Method:
- Heat vegetable oil in a large skillet over medium heat. Add cumin seeds and bay leaf, sautéing until fragrant, approximately 1 minute.
- Add chopped onion, minced garlic, and grated ginger to the skillet. Cook until onion becomes golden brown, about 8 minutes, stirring occasionally.
- Stir in green chili (if using) and diced tomatoes. Continue cooking until tomatoes soften and oil begins to separate from the mixture, approximately 5 minutes.
- Add ground venison to the skillet, breaking it apart with a spatula. Cook until fully browned throughout, about 7 minutes.
- Sprinkle ground coriander, ground cumin, turmeric, chili powder, cinnamon, and salt over the meat. Stir thoroughly to evenly coat.
- Pour water or beef stock into the skillet. Bring to a simmer, cover with a lid, and cook for 15 minutes, stirring occasionally.
- Add frozen peas and garam masala to the curry. Cook uncovered for 5-7 minutes until the sauce reaches desired thickness.
- Taste the curry and adjust salt or additional spices as needed to achieve desired flavor profile.
- Transfer curry to serving vessels and garnish generously with fresh cilantro. Serve hot with lemon wedges on the side.
