# Method:

02 - Heat olive oil in a large pot over medium heat. Cook diced onion until soft, about 5 minutes. Add minced garlic and cook for 1 additional minute.
03 - Add mashed potatoes to the pot. Pour in vegetable broth and bring to a gentle simmer, stirring to combine.
04 - Stir in milk, sour cream, shredded cheese, smoked paprika, dried thyme, salt, and pepper. Cook for 5 to 10 minutes, stirring frequently until smooth and creamy. Adjust consistency with additional broth or milk as needed.
