I first tasted the combination of ube and pistachio at a friend&s summer party and was amazed by how the flavors complemented each other. Ever since then these ice cream bars have been my go-to for sharing something both familiar and unexpected at gatherings.

Ingredients

  • Ube Layer: 1 cup cooked ube (purple yam) mashed, 1/2 cup granulated sugar, 1 cup coconut milk (full-fat), 1/2 teaspoon ube extract, pinch of salt
  • Pistachio Layer: 3/4 cup shelled pistachios unsalted, 1 cup whole milk, 1/2 cup heavy cream, 1/3 cup honey or sugar, 1 teaspoon vanilla extract, pinch of salt
  • Garnish (Optional): 2 tablespoons chopped pistachios, 1 tablespoon sweetened condensed milk (for drizzling)

Instructions

Prepare the Ube Layer:
Combine mashed ube sugar coconut milk ube extract and salt in a saucepan. Cook over medium heat stirring constantly until smooth and slightly thickened (about 5 minutes). Remove from heat and cool to room temperature.
Prepare the Pistachio Layer:
Blend pistachios whole milk heavy cream honey (or sugar) vanilla extract and salt until smooth. Pour into a saucepan and heat gently over medium-low stirring often for 5 minutes (do not boil). Remove from heat and cool.
Assemble the Bars:
Pour cooled ube mixture into ice cream bar molds filling halfway. Freeze 1 hour to set. Pour pistachio mixture over set ube layer filling to top. Insert sticks. Freeze at least 5 hours or until solid.
Serve:
Unmold bars. Optionally drizzle with sweetened condensed milk and sprinkle with chopped pistachios before serving.

Method

Step 01

Prepare Ube Layer: Combine mashed ube, sugar, coconut milk, ube extract, and salt in a saucepan. Cook over medium heat, stirring constantly, until smooth and slightly thickened, about 5 minutes. Allow to cool to room temperature.

Step 02

Blend Pistachio Mixture: Place shelled pistachios, whole milk, heavy cream, honey or sugar, vanilla extract, and salt in a blender. Process until completely smooth.

Step 03

Heat Pistachio Mixture: Transfer blended mix to a saucepan and gently heat over medium-low, stirring often, for 5 minutes without bringing to a boil. Remove from heat and cool.

Step 04

Layer Ube in Molds: Pour the cooled ube mixture evenly into ice cream bar molds, filling each mold halfway. Freeze for 1 hour, until set.

Step 05

Add Pistachio Layer and Freeze: Pour pistachio mixture over the set ube layer, filling molds to the top. Insert sticks and freeze at least 5 hours, until solid.

Step 06

Serve and Garnish: Carefully unmold bars. Drizzle with sweetened condensed milk and sprinkle with chopped pistachios before serving, if desired.
