# Method:
01 - Set the oven temperature to 350°F and line a baking sheet with parchment paper.
02 - Combine almond flour, oat flour, vanilla protein powder, baking powder, and salt in a large bowl, whisking thoroughly.
03 - In a separate bowl, whisk melted coconut oil or butter, maple syrup or honey, egg, vanilla extract, almond extract, and lemon zest until smooth.
04 - Add the wet mixture to the dry ingredients and stir until a soft dough forms.
05 - Gently fold in mini chocolate chips or dried fruit if using.
06 - Scoop rounded tablespoons of dough and roll into balls, placing them onto the prepared baking sheet.
