Picnic Caprese Skewers Balsamic (Printer View)

Fresh cherry tomatoes, mozzarella, basil on skewers with a sweet-tangy balsamic reduction.

# What you'll need:

→ Skewers

01 - 24 cherry tomatoes
02 - 24 mini mozzarella balls (bocconcini or ciliegine)
03 - 24 fresh basil leaves
04 - 1 tablespoon extra virgin olive oil
05 - 1/4 teaspoon sea salt
06 - 1/4 teaspoon freshly ground black pepper

→ Balsamic Drizzle

07 - 1/2 cup balsamic vinegar
08 - 1 tablespoon honey

# Method:

01 - In a small saucepan over medium heat, combine balsamic vinegar and honey. Simmer for 8–10 minutes, stirring occasionally, until the mixture is reduced by half and thickened. Remove from heat and let cool completely.
02 - On each 6-inch cocktail skewer, thread one cherry tomato, one mozzarella ball, and one basil leaf in sequence. Repeat this pattern to fill the skewer, finishing with a tomato.
03 - Arrange the assembled skewers on a serving platter. Drizzle with olive oil and season evenly with sea salt and freshly ground black pepper.
04 - Just before serving, lightly drizzle the cooled balsamic reduction over the skewers, or present it separately for dipping.

# Expert Advice:

01 -
  • They look so elegant that guests think you spent hours, when really you assembled them in under fifteen minutes.
  • Every bite is a perfect balance of cool, creamy, fresh, and slightly sweet—nothing gets old about that combination.
  • They're naturally gluten-free and can sit on the counter for a while without falling apart, which means less stress when people arrive.
02 -
  • If your balsamic reduces too much it hardens into a candy when cool, so when it looks almost right, take it off the heat—it'll keep thickening.
  • Assemble these as close to serving time as possible because the tomatoes will start releasing juice and making everything slip and slide.
03 -
  • Soak wooden skewers in water for thirty minutes before assembling so they don't splinter and so they're less likely to char if they happen to sit near a heat source.
  • If your kitchen is warm, keep the assembled skewers on a cold platter in a cool spot until the moment people arrive—they stay fresher that way.
