# What you'll need:

→ Noodles

01 - 10.5 oz dried wheat noodles or ramen noodles
02 - Gel food coloring (pink, blue, yellow, green)

→ Cloud Sauce

03 - 6.8 fl oz whole milk or plant-based milk
04 - 4.2 oz cream cheese or vegan substitute
05 - 1 tbsp unsalted butter or vegan butter
06 - 2 tbsp grated parmesan cheese or nutritional yeast
07 - 1 tsp cornstarch
08 - 1/4 tsp salt
09 - 1/4 tsp white pepper

→ Garnish

10 - 2 scallions, finely sliced
11 - 1 tbsp toasted sesame seeds
12 - Edible flowers or microgreens, optional

# Method:

01 - Bring a large pot of water to a rolling boil, then divide the water between separate heatproof bowls according to the number of chosen colors.
02 - Stir a small amount of gel food coloring into each bowl, mixing thoroughly to achieve vibrant hues.
03 - Split dried noodles equally and cook each portion individually in the colored boiling water for 2 to 3 minutes less than package instructions. Rinse under cold water immediately and set aside.
04 - In a saucepan over medium heat, melt the butter. Add cream cheese and stir continuously until fully smooth.
05 - Pour in milk and whisk in parmesan, cornstarch, salt, and white pepper. Cook while stirring constantly until thick and creamy, about 5 minutes.
06 - Add colored noodles to the saucepan and gently fold until evenly coated. Maintain the color separation for a cloud-like effect or swirl gently for marbling.
07 - Serve immediately, garnished with scallions, toasted sesame seeds, and optionally edible flowers or microgreens.
