# What you'll need:

01 - 1 cup uncooked quinoa
02 - 2 cups water

03 - 1 cup cherry tomatoes, halved

06 - 1/4 cup fresh parsley, chopped

08 - 2 tablespoons extra virgin olive oil

10 - 1 teaspoon lemon zest
11 - 1/2 teaspoon salt
12 - 1/4 teaspoon ground black pepper

# Method:

01 - Thoroughly rinse the quinoa under cold running water. Combine quinoa and water in a medium saucepan, bring to a boil, cover, reduce heat, and simmer for 15 minutes until liquid is absorbed.
02 - Remove pan from heat, leave covered for 5 minutes, then fluff quinoa with a fork. Allow to cool to room temperature.
03 - Slice cherry tomatoes in half, dice the cucumber, finely chop the red onion, parsley, and mint.
04 - In a large bowl, combine cooled quinoa, tomatoes, cucumber, onion, parsley, and mint. Toss until well distributed.
05 - Whisk together olive oil, lemon juice, lemon zest, salt, and black pepper in a small bowl.
06 - Pour dressing over the salad. Toss thoroughly to combine and serve at room temperature or chilled.
