01 - 1 pound 1 ounce fresh or frozen blackcurrants, stems removed

02 - 25.4 fluid ounces vodka, quality neutral vodka preferred
→ Sweetener
03 - 8.8 to 12.3 ounces granulated sugar, adjust to taste
# Method:
01 - Wash blackcurrants thoroughly and remove any stems or leaves. Pat dry if using fresh berries.
02 - Place prepared blackcurrants into a large sterilized glass jar or bottle with a tight-fitting lid.
03 - Add granulated sugar over the berries, then pour vodka to cover completely. Seal jar tightly and shake gently to mix.
04 - Store the sealed jar in a cool, dark place. Shake gently every 2 to 3 days to dissolve sugar.
05 - Allow infusion to develop for 3 to 6 weeks. Taste after 3 weeks to assess flavor development.
06 - When flavor reaches desired intensity, strain liqueur through a fine sieve or muslin cloth into a clean bottle. Discard spent berries or reserve for baking.
07 - Seal bottled liqueur and store in a cool, dark place. Allow 2 to 4 additional weeks for optimal flavor development before serving.
